Fall Favorites: This Season’s Budget Friendly Comforting Cuisine

One of my favorite parts of Autumn is the excuse to cook some comfort food. Sit inside and watch the leaves change while you bite into a few of my personal Fall favorites! Instead of going to a coffee shop and spending $5 on a pumpkin spiced latte, try out my recipe for 46 cents per serving.

Perfect Roasted Pumpkin Seeds:

Pricetag: $3.99 for a medium sized pumpkin

Ingredients:

Pumpkin Seeds – store bought, or have some fun carving a pumpkin to get to the seeds

1 to 3 tbsp – Olive Oil

Seasoning – Salt, Pepper, Chili Pepper/Cayenne and Garlic Powder

*Preheat your oven to 300 degrees. Rinse the pumpkin goo off of the pumpkin seeds in a strainer and blot dry with a paper towel. Place pumpkin seeds in a bowl and mix olive oil and seasonings in until well coated. Put a sheet of aluminum foil over a cookie sheet (for easy cleanup) and spread pumpkin seeds evenly across the pan. Bake in 300 degree oven for 35 to 45 minutes or until golden brown. Remove, let cool and enjoy!

Ooey Gooey Pizza Lasagna

Pricetag: $17.41 for all of the ingredients – serves 7 people – $2.48 per person!

Ingredients:

1 Package – Lasagna Noodles (oven ready)

12 Ounces (3 Cups) – Mozzarella Cheese

8 Ounces (1 carton) – Ricotta Cheese

1/4 Cup – Parmesan Cheese

1 Jar – Vodka Pasta Sauce (or Marinara)

1 Pound – Italian Sausage

Pepperoni – However much you want

1 Package – Sliced White Mushrooms

1 – Green Pepper

1/2 Can – Sliced Black Olives

*Preheat your oven to 375 degrees. Cook Italian sausage in a skillet over medium-high heat until brown, mix in 1/4 of the jar of vodka sauce. Boil the lasagna noodles for 6 minutes until softened before placing them in oven pan. Spread a thin layer of sauce at the bottom of a oven pan (to prevent sticking).

*Layer 4 noodles into the pan for each layer that you want. Spread toppings (ricotta and mozzarella cheese, pepperoni, green pepper, mushrooms, black olives and italian sausage) onto each layer. Finish the top layer with sprinkles of the parmesan cheese. Cover the lasagna with aluminum foil before placing in oven.

*Cook lasagna at 375 degrees for 50-minutes. Remove from oven and let sit for 15 minutes. Enjoy!

Pumpkin Spiced Chai Delight:

Pricetag- 46 cents per serving – Compare that to the $5 latte you’ll get at a coffee shop!

1 Tea Bag (loose or pre packaged) – Chai Tea

1/4 Cup – Pumpkin Puree

8 Ounces – Boiled Water or Milk

Topping – Whipped Cream

1 tsp – nutmeg

*Boil water or milk and pour over the top of tea bag in a coffee cup. Let steep for 3-6 minutes. Mix in pumpkin puree after pulling the tea bag out. Top your delightful drink with a swirl of whipped cream and sprinkle nutmeg over the top for an extra kick of seasonal flavor. Sip your way to bliss!!!
